Spanish Garlic Soup
Allegedly originality made by shepherd's tending their flocks this tasty soup fills a corner, and is easy to make. Here's a recipe I've tried before with success...
Ingredients
8 cloves garlic
200 g bread (stale)
80 ml olive oil
1 tsp smoked paprika
1 litre vegetabke stock
4 eggs
salt
pepper
Method
Peel and slice the garlic. Cube the bread.
Heat olive oil in a large pot and lightly fry the bread cubes in the olive oil over medium heat until golden brown.
Add garlic and fry together briefly.
Stir in Pimenton and stock.
Simmer for about 10 minutes.
Add the eggs and cover to poach them (about 4 minutes).
Serve in bowls and season with salt and pepper to taste. and enjoy!
