Espigalls

That's the answer you were all looking for to Sunday's challenge.


Espigalls are part of the cabbage family and are grown solely in the region of Garraf. They are a seasonal vegetable seen around this time of year, and one of my favourites.


Their wispy leaves can be cooked in many ways, and a couple of years back the local council organised an espigall festival.


I like to blanch them in hot water then cover in a sauce. I have made them in a cheese sauce, white wine sauce with mushrooms and even a curry sauce.


If you are staying in Vilanova, or the Garraf region why not get yourself some and give them a try? They are always available in the Saturday Market at this time of year.
