Calçots (pronounced Kalsots) are long green and white onions popular at this time of year, here in Catalunya, and eat to find in all the markets during this season.

Calçots are most often cooked on a barbecue until the outer layer is well-charred (read burnt). Then to eat them you peel back this layer, do them in Romesco sauce, tip your head back and slide them in.

There are many restaurants in the surrounding areas that offer Calçotadas, where, yep you've guessed it, the main dish is calçots.
