Bunyols de Quaresma


Bunyols de Quaresma (Lent bunyols) are basically doughnuts They are traditional fayre for the period of Lent (quaresma) and are fiarly simple to make. (with apologies to anyone out there who has a different recipe to the one I have)

Ingredients

125ml. milk

125ml. water

110g. butter

1 pinch of salt

1 pinch of sugar

150g. flour

3 large free range eggs

oil to fry (prereable sunflower oil or one without a strong flavor)

caster sugar to coat

Preparation

In a small saucepan bring the milk, water, butter, salt and sugar to boil.

When it starts to boil add in the flour and stir well and constantly for 2 or 3 minutes.

After this, remove the saucepan from heat and add the eggs one by one, making sure each egg is fully combined before adding the next.

Heat the oil to a medium temperature (test with a small amount of the dough- it should bubble when the oil is hot enough) and drop in small amounts of dough (A tablespoon is about the right amount for each bunyol.

Once the dough has a nice tan colour and floats on the top of the oil it should be ready.

Take them out of the oil and drain slightly, then roll in sugar straight away.

The best way to enjoy them, of course, is on the balcony in the sunlight
